Restaurateurs to HBS: Gorge 'Em and Gouge 'Em

At a Harvard Business School panel last week, Mario Batali, Lidia Bastianich, and Drew Nieporent opened up their books to show the hungry moguls-in-training how to get rich and fat. The money quote:

"'You're going to go crazy about this next figure, but my rent is only 0.85 percent of my gross sales,' Nierporent said, grinning. 'No tablecloths, no butter, no silverware. That's the way you make money in the restaurant business.'"
Something to chew on that next time you're dropping $150 a head at Nobu.
