The city's largest hotel, the New York Hilton Midtown, is eliminating its room service operation and replacing it with a cafeteria, leading to speculation that other hotels will soon follow suit. "I don't think anyone makes a profit on room service because of its labor costs. I'm sure all the big hotels will be looking at what Hilton is doing," said the senior vice president of a hotel consulting company.
