It's been unclear what the future holds for the old Nassau Brewery at the corner of Franklin Avenue and Bergen Street in Crown Heights, but we know part of the plan: cheese caves. Benton Brown and Susan Boyle, the couple that restored the brewery's old ice house into "a green-roofed, solar-powered complex of 30 commercial spaces and six apartments," has turned "three forgotten lagering tunnels" under the building into a cheese-aging cellar to create what just might be the most Brooklyn of Brooklyn projects.
